Quiche Reinvented: Broccoli and Ham

Ingredients :

  • Pastry : 1 (purchased or homemade)
  • Broccoli : 500g, washed and cut into small bouquets
  • Ham : 200g, diced
  • Eggs :4, beaten
  • sour cream : 200ml
  • Grated cheese (Emmental or Comté): 100g
  • Salt pepper : according to taste
  • Nutmeg : a pinch

Preparation :

  1. Pastry : Preheat the oven to 200°C. Spread it pastry in a pie pan. Prick the bottom using a fork.
  2. Broccoli : In a pan of boiling salted water, blanch the broccoli for 4-5 minutes until they are tender but still crunchy. Drain and reserve.
  3. Blend : In a large bowl, combine the beaten eggs, crème fraîche, salt, pepper and nutmeg. Add the diced ham and mix well.
  4. Assembly : Distribute the broccoli evenly over the tart base. Pour the egg and cream mixture on top. Sprinkle with grated cheese.
  5. Cooking : Bake for 30-35 minutes, or until the quiche is golden brown and the filling is set.
  6. Serve : Leave to rest for a few minutes before serving hot, accompanied by a nice green salad.
