Ingredients for Coconut Cheesecake
For the base:
- 200g digestive biscuits
- 100g melted butter
- 50g of coconut grated

- 500g of fresh cheese
- 200g of sugar
- 4 eggs
- 200g grated coconut
- 1 teaspoon vanilla extract
For the topping:
- 200g fresh cream
- 2 tablespoons of sugar
- 50g grated coconut
Preparation of the Coconut Cheesecake
- Prepare the base: Crush the digestive biscuits and mix them with the melted butter and grated coconut. Press this mixture into the bottom of a springform pan and set aside in the refrigerator.
- Prepare the filling: Beat the cream cheese and sugar until creamy. Add the eggs one at a time, mixing well between each addition. Add the shredded coconut and vanilla extract and mix until smooth. Pour this filling over the cookie base.
- Baking the cheesecake: Preheat your oven to 180°C (th.6). Bake the cheesecake for 50 minutes. The center should be slightly wobbly.
- Topping preparation: While the cheesecake is baking, mix the crème fraîche, sugar and grated coconut. Spread this topping on the cheesecake as soon as it comes out of the oven, then let it cool.
