5 minute milk-free pancakes

Ingredients for approximately 10 pancakes:

  • 200g flour (classic wheat flour or gluten-free flour for a gluten-free version)
  • 50 g of sugar (optional, for sweet crepes)
  • 2 tablespoons of vegetable oil (sunflower, rapeseed or coconut)
  • **500 ml of vegetable milk (soy drink, almond, oats, rice…)
  • 1 teaspoon of vanilla extract or orange blossom (optional)
  • A pinch of salt

Optional for a version without egg : Replace the eggs with 100 g of yogurt vegetable (soy or coconut) or 1 crushed banana.

Preparation (5 minutes):

  1. In a large bowl, mix it flour, sugar and a pinch of salt. If you opt for a gluten-free version, use a suitable flour (rice, buckwheat, gluten-free mixture).
  2. Add the vegetable oil and mix lightly.
  3. Gradually incorporate the vegetable milk while whisking to avoid lumps. You can use soy milk, almond, oat or any other plant-based milk of your choice.
  4. Add the vanilla extract or orange blossom to flavor your pancake batter.
  5. For an egg-free version, integrate the vegetable yogurt or the crushed banana to the preparation and mix well.
  6. Let the dough rest a few minutes if you have time, otherwise you can go straight to cooking.

Cooking :

  1. Heat a crepe maker or non-stick pan over medium heat. If necessary, lightly grease with a little vegetable oil or margarine.
  2. Pour a small ladle of batter in the pan, tilting it to evenly distribute the batter.
  3. Cook each pancake about 1 to 2 minutes on each side, until lightly browned.
  4. Stack the pancakes on a plate and cover them to keep them warm.
