Summer apricot tart

Ingredients :

  • 1 shortcrust pastry ready to roll out
  • 800g fresh apricots
  • 150g powdered sugar
  • 2 eggs
  • 100g of almond powder
  • 20cl of thick crème fraîche
  • 1 teaspoon vanilla extract

Preparation :

  1. Preheat your oven to 180°C (350°F) and roll out the shortcrust pastry in a 24 cm diameter tart tin. Prick with a fork.
  2. Wash the apricots, cut them in half and pit them.
  3. Arrange the apricot halves cut side up on the pastry.
  4. In a bowl, beat the eggs with the sugar until fluffy. Add the ground almonds, fresh cream and vanilla extract, and mix well.
  5. Pour this mixture over the apricots.
  6. Bake for 35-40 minutes, or until the pie is golden brown and the filling is set.
  7. Leave to cool before serving this fondant apricot tart. For an even more indulgent dessert, add a scoop of vanilla ice cream or a splash of whipped cream.
