Ingredients :
– 4 eggplants
– 500 g of minced meat
– 1 onion and 1 clove of chopped garlic, parsley, salt, pepper
– Tomato coulis
– Grated cheese
Preparation
1. Fry the sliced eggplants in olive oil.
2. Set them aside.
3. Make a stuffing with the meat, onion, garlic, parsley, salt, pepper and tomato coulis.
4. In a gratin dish, place a layer of eggplant and a layer of stuffing.
5. Repeat the operation, alternating eggplant and stuffing.
6. Finish with a layer of tomato coulis and grated gruyere.
7. Bake in a hot oven for 40 minutes.
