Ingredients :
– 1 kg of squid
– 4 shallots
– 3 tablespoons of olive oil
– 1 box of tomato coulis
– 2 cloves garlic
– 1.5 dry white wine
– Salt and pepper
– 1 dl of water
– 1 stalk of celery, saffron, parsley
Preparation
1. Clean the squid and cut them into pieces.
2. Peel and chop the shallots.
3. Brown the squid with the shallots in hot oil. Add the tomato coulis, crushed garlic, white wine, water, celery and season.
4. Cover and simmer for 1 hour.
5. Sprinkle with chopped parsley.
6. Serve with rice.
