Let yourself be tempted by this rhubarb pie recipe, both tangy and sweet. An ideal recipe to enjoy seasonal rhubarb.

Ingredients :
For the dough:
- 200g flour
- 100g butter
- 50g of sugar
- 1 egg
- 1 pinch of salt
For garnish:
- 500g of rhubarb
- 150g of sugar
- 2 eggs
- 20cl of thick crème fraîche
Preparation :
1. Prepare the dough
In a salad bowl, mix the flour, sugar, butter cut into small pieces and salt. Knead until you obtain a sandy consistency. Add the egg and mix until you obtain a homogeneous dough. Form a ball, wrap it in cling film and let it rest in the refrigerator for 30 minutes.
2. Prepare the rhubarb
Meanwhile, peel the rhubarb and cut it into small pieces. Place them in a colander, sprinkle them with 50g of sugar and leave to drain for 30 minutes.
3. Preheat the oven
Preheat your oven to 180°C (thermostat 6).
4. Spread the dough
Take the dough out of the refrigerator and spread it into a tart pan. Prick the bottom of the tart with a fork.
5. Prepare the filling
In a salad bowl, beat the eggs with the rest of the sugar and the crème fraîche. Add the drained rhubarb and mix well.
6. Assemble the pie
Pour the filling onto the pastry and bake for around 40 minutes, or until the tart is golden and the filling is set.
