Roasted Butternut Squash with Honey and Spices in 30 Minutes

Honey Roasted Butternut Squash

Ingredients :

  • 1 butternut squash (butternut) medium
  • 2 tablespoons of honey
  • 2 tablespoons of olive oil
  • 1 teaspoon of cinnamon
  • 1 teaspoon sweet paprika
  • Salt and pepper
  • 100g of feta or ricotta crumbled
  • A few sprigs of fresh thyme (optional)

Preparation (30 minutes):

  1. Preheat your oven at 200°C (thermostat 6-7).
  2. Prepare the squash:
    • Wash and dry it butternut squash. Cut it in half lengthwise and remove the seeds with a spoon.
    • Place each half, cut side down, on a cutting board.
    • Make cuts every 5mm without cutting all the way, to create the effect hasselback. Tip: place chopsticks on each side of the squash to avoid cutting entirely.
  3. Prepare the marinade:
    • In a bowl, mix the honey, olive oil, cinnamon, paprika, salt and pepper.
    • Using a brush, generously brush the squash, making sure the marinade penetrates the cuts.
  4. Bake:
    • Place the squash halves on a baking sheet lined with parchment paper.
    • Sprinkle with fresh thyme if desired.
    • Bake for 25 to 30 minutes, until the squash is tender and slightly caramelized.
  5. Finishing :
    • Remove from the oven, sprinkle the hot squash with feta or ricotta crumbled to add a creamy and salty touch.
