The seasonal food calendar for January

In January it is the season for winter fruits and vegetables.

The holidays are over, we had a great time with foie gras and chocolates. It’s time to eat a little more balanced, with seasonal vegetables and fruits. You can stock up on citrus fruits for vitamin C. Cook squash gratins or discover a forgotten vegetable that is returning to our markets, Jerusalem artichoke, very rich in fiber and low in calories.

You also have the list of cheeses, meat and fish for this month of January.

For the vegetables you will enjoy:

Cabbage, squash, lamb's lettuce, avocado, beetroot, endive, leek, Jerusalem artichoke and onion.

Munster, Salers, Laguiole, Abondance and Vacherin.

And for proteins:

Beef, rabbit and pig.

Fish:

Whiting, brill, conger eel, dogfish, skate, gray sea bream, squid, plaice and pout.
