Preparation (10 minutes):

Without Thermomix:

  1. In a saucepan, pour 400 ml of milk and add the sugar. If using a vanilla pod, split it in half, scrape out the seeds and add them to the milk with the pod. Bring to a boil over medium heat.
  2. In a bowl, mix the remaining 100 ml of milk with the cornstarch (or instant pudding mix) until you obtain a homogeneous mixture without lumps.
  3. Once the sweetened milk is hot, remove the vanilla pod if used, then pour the milk-starch mixture into the saucepan, stirring constantly with a whisk.
  4. Let it thicken over low heat while continuing to stir for about 2 to 3 minutes, until you obtain a creamy consistency.
  5. Pour the pudding in ramekins or verrines. Let cool to room temperature then refrigerate for at least 2 hours before serving.

With Thermomix:

  1. In the Thermomix bowl, place all the ingredients: milk, sugar, cornstarch (or instant pudding mix), and vanilla extract or vanilla pod seeds.
  2. Program 8 minutes at 90°C, speed 3.
  3. Pour the pudding in ramekins or verrines. Let cool then refrigerate for at least 2 hours before serving.
